Wimpies (aka Sloppy Joes)

I haven’t posted a recipe since Lexi was born and I want to get back into the habit. We’ve been eating a lot of easier recipes lately, for obvious reasons. Last night we had Wimpies. Tea, Again

We’re now addicted to our Masala Chai from Portsmouth Tea. Sending it to us for free worked, we’ve already placed another order and are completely dependent on morning Chai now. Mike said the other day, “I don’t even think about coffee anymore,” and he used to drink half a pot of coffee every morning! We also tried the Caramel Oolong this time around, and it’s very good as well.

MMM…Mexican

One of the nice things about Quicken is that it tries to guess my spending habits and lets me know if a transaction is overdue or coming soon.

While catching up with some bills today, Quicken told me that I was overdue for El Chapala, the Mexican restaurant next to church. I guess we have been going there pretty regularly. :o)

Chicken Corn Chowder

Mike requested that I start making more soups this winter, so I have been working on Chicken Corn Chowder the last few weeks, combining several recipes and playing around. We’re pretty pleased with it.

Cornbread Muffins

Tea Update

We got our free large tin of Masala Chai from Portsmouth Tea Company minutes before we left for Thanksgiving, but lacking an infuser (despite efforts to aquire one) we hadn’t tried it until last night when my brilliant husband had the idea of using our french press, which worked beautifully. With milk and sugar, it was excellent tea. Truly some of the best Chai I’ve ever had. Thanks, Marshall!

Mom’s Chili

If you are an astute reader of this blog, you probably know that I love my mother’s cooking. Last night I made a big pot of her chili and thought I’d share the recipe with y’all. It’s a great basic chili recipe with lots of flavor that I (a non-chili aficionado) think tastes good even without sour cream and shredded cheese, which is saying a lot. It tastes better the second day, as chili often does. Mom used to make this sans-meat when we were vegetarians, though I am not sure if she added more beans. Hot Chocolate

I’ve become very into hot chocolate the last week or so, drinking at least a cup a day, usually two. I try not to overdo caffeine in pregnancy, so hot chocolate is a very fine option for those extra liquid calories none of us really need. Anyhow, I woke up this morning and thought, “Wow, I didn’t have ANY hot chocolate yesterday!” Then I realized why — I had Yoder Dairies Egg Nog instead. I need to stop using pregnancy as an excuse to pig out!

Not Quite a Recipe

I can certainly post a basic quiche recipe if anyone needs it, but this week’s feasting entry is devoted to a tip/trick more than the recipe itself. Lately, when I make a quiche, I double the filling and then freeze not only the extra crust, but also extra uncooked filling in a ziplock bag. That way I only need to saute mushrooms, fry bacon, et. al. one time, and while I am already measuring and dirtying things, I get a second quiche out of the way as well. Mike and I take three days or more to finish a quiche — I just make sure we have different sides like homemade muffins, salad, tomato basil soup, etc. to change things up. So after a quiche week, we usually take a 3-4 week break, and then all I have to do is defrost, roll and bake the crust and then pour in the filling. VERY simple! This week’s quiche was ham, spinach, sweet onion and mushroom with colby jack cheese.
